RADISH & PESTO PASTA
any pasta - as much as you eat
8 radishes + green leaves
2 tablespoons Greek yogurt
1 huge clove of garlic, crushed
1tbsp Lulu's Kitchen basil & cashew nut pesto
5 basil leaves
1 tablespoon olive oil
1. Cook the pasta al dente
2.In a bowl, mix until smooth: 5 radishes, pesto, basil and yogurt, salt to taste. Cut other 3 radishes into quarters.
3. Put radish leaves in the pan, pour olive oil over them and add garlic. Fry for about 2-3 minutes, until the leaves wilt slightly.
4. Drain the pasta with cold water, mix it with yoghurt sauce, fried radish leaves and radish quarters. Serve immediately.
*for a little extra kick I add in some wasabi with the pesto - magic!
